Ink cuttlefish Paella

One of the most surprising and delicious rice dishes in Spanish cuisine, a DOP Valencian rice combined with a sofrito of cuttlefish, onion, and pepper, cooked in a fish fumet and complemented with cuttlefish ink that gives it its characteristic black color and delicious, distinctive sea flavor. Served with optional homemade alioli dollops and socarrat, a choice that leaves no one indifferent.

Paella de Marisco (Seafood Paella)

Seafood paella is made with ingredients based on the fruits of the sea, combined with the traditional sofrito, fish broth, paprika, and tomato, creating a paella rich in seafood flavor and crowned with prawns. This is the paella commonly enjoyed in coastal towns and the one tourists are most familiar with. It is a dish full of flavor and contrasts, prepared with mussels and large shrimp alongside saffron sofrito, finished with the characteristic socarrat crust.

Vegetables Paella (Vegan)

Our vegetable paella is crafted following the traditional Valencian paella method but completely free of any animal products. Instead, we use a carefully selected variety of seasonal, local (kilometer 0) vegetables, ensuring every bite bursts with the authentic flavors of a classic paella. This exceptional vegetarian and vegan experience is perfect for those who choose not to consume meat due to health, ethical reasons, or personal preference—offering the rich, vibrant essence of paella in a wholesome, plant-based form.

Remember that all prices are per person and include an aperitivo of tapas featuring delicious and diverse homemade Spanish omelets (tortillas de patatas), bread with tomato, olives, and potato chips served with Espinaler sauce that you can eat while we cook the Paellas!.
